What you need:

  • 1 tbsp olive oil
  • 1/2 onion, diced
  • 4 Roma tomatoes, diced
  • 1 jalapeno, diced
  • 1 chipotle pepper in adobo sauce, diced
  • 2 cloves garlic, minced
  • 1 tbsp ancho chile powder
  • 1/2 tsp cumin
  • 1/2 tsp oregano (preferable Mexican)
  • 1/2 tsp kosher salt
  • 1/2 cup chicken broth
  • 1/4 cup cilantro, chopped
  • 1 lime, juice

Step 1 Heat the olive oil over medium-high heat. Add the onions and jalapeños. Cool for 5-7 minutes until softening. Then add the tomatoes, chipotle pepper, garlic, ancho chile powder, cumin, oregano, and salt. Cook for 5-7minutes until the onions and peppers are softened and tomatoes are breaking down and concentrated..

Step 2 Turn off the heat and stir in the chicken broth, cilantro, and lime juice.
