These easy shrimp boil packets have all the flavors of a traditional Cajun shrimp boil all made in an easy aluminum foil packet! With shrimp, sausage, corn, potatoes, and greens beans in Cajun seasoning.

Ingredients

  • 1.33 lbs. shrimp, peeled and deveined
  • 4 lean chicken sausages, sliced (about one pound, I used andouille)
  • 2 ears corn, quartered
  • 1.33 cups green beans
  • 1 cup mushrooms (I used baby bellas)
  • 1 sweet onion, chopped
  • 1 lb. red potatoes, chopped (I used baby red potatoes quartered)
  • 1 tbsp. olive oil
  • 4 tsp. Cajun seasoning (or to taste)
  • Salt and pepper

Let's Watch Shrimp Boil Foil Packets

Step 1 Add the potatoes and corn to a pot of boiling water. Par cook for 7 minutes until potatoes are just beginning to become tender. Prepare 4 large pieces of foil, about 16-18 inches long. Divide the shrimp, sausage, potatoes, corn, green beans, onion, and mushrooms among the packets. Drizzle each with olive oil and sprinkle with Cajun seasoning. Season with salt and pepper to taste.

Step 2 Fold up the packets making sure they are completely sealed. Place on the grill and cook for 14-16 minutes until shrimp is cooked and vegetables are tender. You can also bake them in a 425 degree oven for 20-25 minutes.

Step 3 Carefully open to serve. Top with additional seasoning, salt, or pepper if needed.
