What you need:

  • 2 tbsp olive oil
  • 1 onion, sliced thin
  • 6 garlic cloves, minced
  • 2 tsp Calabrian chilies (or red pepper flakes, adjust to taste)
  • 1 cup dry white wine
  • 28 oz fire roasted diced tomatoes
  • 1 tsp Italian seasoning
  • 1/4 cup fresh parsley
  • 2 tbsp fresh basil

Step 1 Heat the olive oil in a skillet. Once hot add the onions and cook for 4-6 minutes until beginning to soften. Add the garlic and Calabrian chilies (red pepper flakes). Cook for 1 minute.

Step 2 Add the wine to the pan and use it to deglaze the pan, scraping any browned bits from the bottom of the pan.

Step 3 Add the tomatoes and Italian seasoning. Bring to a simmer and cook for 15-30 minutes to deepen the flavor. It should thicken slightly. Taste and adjust spice level if needed. Season with salt and pepper.

Step 4 When ready to serve, add parsley and basil. This is delicious with shrimp, chicken, seafood, or pasta.
