  • 2 tsp. coconut oil
  • 4 cups cauliflower rice
  • 1 garlic cloves, minced
  • 2 tsp. fresh ginger, minced
  • 1/3 cup lite canned coconut milk (or full fat)
  • Salt and pepper
  • 2 tbsp cilantro, chopped (optional)

Let's Watch Coconut Cauliflower Rice

Step 1 Heat the coconut oil over medium heat in a skillet. Add the garlic and ginger and cook for one minute until fragrant. Add the cauliflower rice and cook for 3-4 minutes.

Step 2 Add the coconut milk and cook for 5-7 minutes until it is mostly absorbed and the cauliflower rice is tender. If you want sweeter rice, add a bit of coconut sugar or Stevia to the coconut milk before adding.

Step 3 Turn off the heat and add the cilantro if using. Season well with salt and pepper. This is delicious with some fresh squeeze lime juice as well.
