No more boring cauliflower rice with this 15-minute coconut cauliflower rice. It's creamy, full of coconut flavor, and finished with lime and cilantro. Make ti with store-bought or homemade cualiflower rice.
Step 1
Heat the coconut oil over medium heat in a skillet. Add the garlic and ginger and cook for one minute until fragrant. Add the cauliflower rice and cook for 3-4 minutes.
Step 2
Add the coconut milk and cook for 5-7 minutes until it is mostly absorbed and the cauliflower rice is tender. If you want sweeter rice, add a bit of coconut sugar or Stevia to the coconut milk before adding.
Step 3
Turn off the heat and add the cilantro if using. Season well with salt and pepper. This is delicious with some fresh squeeze lime juice as well.
