Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 celery, diced
  • 1 carrot, diced
  • 2 sweet potatoes, peeled and diced
  • 4 garlic cloves
  • 1 tsp turmeric
  • 1 tsp Italian seasoning
  • 6 cups chicken broth
  • 1 cup Israeli couscous (or orzo, small pasta)
  • 2 cups cooked chicken breast, chopped
  • Salt and pepper

Let's Watch Chicken and Sweet Potato Soup

Step 1 Heat the olive oil over medium high heat. Add the onion, carrots, and celery. Cook for 4-5 minutes until beginning to become tender.

Step 2 Add the sweet potatoes and cook for 3-4 minutes, until beginning to brown slightly. Add the garlic, turmeric, and Italian seasoning. Cook for 1 minute until fragrant.

Step 3 Add the chicken broth and bring to a simmer. Let cook for 10-15 minutes until sweet potatoes are almost tender. Add the couscous or pasta. Let cook for 7-11 minutes until tender, but slightly al dente since it will continue to cook in the hot broth.

Step 4 Add the chicken and stir. Taste and season with salt and pepper. We love adding a splash of vinegar to soup right before serving. Use apple cider vinegar or sherry vinegar.
