Chicken and Broccoli Stir Fry

What you need:

  • 2 tbsp. cornstarch
  • 1/2 tsp. pepper
  • 1 lb. boneless skinless chicken breast, cut into strips
  • 2 tsp. vegetable oil
  • 1 cup low sodium chicken broth
  • 5 cups broccoli florets
  • 1 tbsp. ginger, minced
  • 2 tsp. minced garlic
  • 1/4 tsp. red pepper flakes, or to taste (optional)
  • 1/4 cup low-sodium soy sauce

Step 1 Toss together the chicken, pepper, and half of the cornstarch.

Step 2 Heat the vegetable oil in a nonstick skillet over medium high heat. Add the chicken and cook for about 4-6 minutes until browned and cooked through. Set aside.

Step 3 Add half of the chicken broth to the pan. Add the broccoli and cook for about 3 minutes until just tender.

Step 4 Add the ginger, garlic, and red pepper flakes and cook for 1 minute.

Step 5 Stir together the soy sauce, remaining chicken broth, and remaining cornstarch. Add to the pan and cook for 2-3 minutes until sauce begins to thicken.

Step 6 Add chicken to skillet and cook for 1 additional minute. Turn off heat and let the sauce thicken for one minute. Serve.
