  • 8 large eggs
  • 1/3 cup skim milk
  • 3/4 cup shredded cheddar cheese (I used reduced fat)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tbsp olive oil
  • 5 cups baby spinach
  • 1/4 onion, sliced very thin
  • 2 tbsp Parmesan cheese

Step 1 Preheat the oven to 350 degrees. In a large bowl, whisk the eggs until well combined. Whisk in the milk, cheddar cheese, salt, and pepper. Set aside.

Step 2 In a heavy skillet, add olive oil over medium heat. Add the onions and cook for 3-4 minutes until softening. Add the spinach and cook for 3-4 minutes until wilted.

Step 3 Pour the eggs into the pan, making sure they spread out evenly. Let cook for 1-2 minutes so the edges begin to set.

Step 4 Sprinkle Parmesan cheese over the top.

Step 5 Place in the oven and bake for 18-22 minutes until the eggs are just set. Let rest for at least 5 minutes before serving.
