- 8 stalks celery (¼ inch diagonal slices, stalks and leaves)
- 1/4 cup fresh parsley, chopped
- 3 tbsp dill, chopped
- 1.5 tsp fennel seeds (or mustard/caraway seeds)
- 3 tbsp red wine vinegar
- 3 tbsp extra virgin olive oil
- 2 tsp sugar
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
In a large bowl, whisk together the olive oil, red wine vinegar, fennel seeds, sugar, salt, and pepper.
Add the celery, parsley, and dill. Toss to coat. Tatse and season with additional salt, pepper, herbs, or sugar if needed.
Add any additional ingredients like apples, Parmesan cheese, red onions, dates, or almonds. Let rest for 10-15 minutes before serving.
