Baked Sweet Potato Fries

- 1 lb sweet potatoes, peeled and cut into thin fries (¼ inch wide)
- 1 tbsp cornstarch
- 1.5 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper
Add the cut potatoes into a large bowl of cold water. Let sit for at least 30 minutes. Drain the fries and dry very well with a towel.
Preheat the oven to 425 degrees. Toss the sweet potato fries with the cornstarch to coat well.
Add the olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss to coat.
Cover a baking sheet with parchment paper or spray with cooking spray. Lay the fries out in a single layer on the baking sheet, making sure not to overcrowd the pan.
Bake for 25-30 minutes, flipping after 15 minutes, until lightly browned and crispy on the outside.
