  • 1.5 lbs boneless skinless chicken breasts (4 smaller chicken breasts)
  • 1.5 tbsp melted butter
  • 1 lemon
  • 1 tbsp lemon pepper seasoning
  • 1/2 tsp paprika
  • Salt and pepper (to taste, it is already in the lemon pepper seasoning)

Step 1 Preheat the oven to 400 degrees. Lightly spray a baking dish with cooking spray. Place the chicken in the baking dish so it doesn’t overlap.

Step 2 Combine the butter, juice of ½ lemon, lemon pepper seasoning, and paprika in a small bowl.

Step 3 Brush this mixture over the chicken breasts in the baking dish, making sure to use it all.

Step 4 Cut the remaining lemon into slices and place those in the baking dish as well.

Step 5 Bake for 25-35 minutes until the chicken is cooked through, making sure not to overcook the chicken. The exact cooking time depends on the size of the chicken breasts. Chicken should be cooked to 165 degrees. Let rest for 5-10 minutes. Garnish with fresh chopped parsley before serving. Serve chicken with any juices from the dish drizzled on top.
