These easy Baked Falafel come out crispy and golden brown every time without deep frying! Made with canned chickpeas, fresh herbs garlic, and lemon.

  • 15 oz can chickpeas, drained and rinsed
  • 1/4 cup onion, chopped
  • 2 cloves fresh garlic
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp ground cumin
  • 3/4 tsp kosher salt
  • 1/2 teaspoon baking soda
  • 3 tbsp whole wheat flour (or gluten-free)
  • Cooking spray

Step 1 Preheat the oven to 375 degrees. Add everything except the baking soda and flour to the food processor. Process until a thick, chunky mixture forms. Taste the mixture and add seasoning if needed. Stir in the flour and baking soda.

Step 2 Form into small patties using about 2 tbsp of the mixture per falafel. Place on a parchment lined baking sheet. Spray with cooking spray.

Step 3 Bake for 20-25 minutes or until golden brown. Flip halfway through.
