Baked Eggplant Fries

What you need:

  • 1 large eggplant
  • 1 tbsp olive oil
  • 2/3 cup seasoned breadcrumbs (whole wheat or regular)
  • 1/4 cup Parmesan cheese
  • 1 tsp garlic powder
  • 2 egg whites
  • Cooking spray

Step 1 Preheat the oven to 450 degrees. Cut the eggplant into fries, about ½ inch thick. Toss the eggplant with olive oil, salt, and pepper.

Step 2 In a shallow dish, combine the breadcrumbs, Parmesan cheese, and garlic powder. Whisk the egg whites in a shallow dish.

Step 3 Dip the eggplant into the egg whites and press into the breadcrumbs mixture to coat on both sides.
