Baked Apple Cinnamon Oatmeal

What you need:

  • 1 lb apples, chopped
  • 1/4 cup brown sugar (or honey/maple syrup)
  • 1.5 tsp cinnamon
  • 2 cups rolled oats
  • 1/3 cup chopped walnuts (optional)
  • 2 cups almond milk (or milk of choice)
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp kosher salt

Step 1 Preheat the oven to 350 degrees. Spray an 8 X 8 baking dish with cooking spray. Add the apples to the baking dish. Toss with brown sugar and cinnamon. Cover with foil. Bake for 20 minutes.

Step 2 Whisk together the milk, eggs, vanilla extract, baking powder, and salt in a large bowl. Stir in the oats and walnuts if using.

Step 3 Remove the apples from the oven carefully. Pour in the oatmeal mixture and stir to combine. Return to the oven uncovered.
