Turkey Poblano Tostadas

Ingredients
- 8 corn tortillas
- 2 tsp. olive oil
- 1 poblano pepper, seeded and chopped
- 1/2 red onion, sliced thin
- 1 lb. 99% lean ground turkey
- 2 garlic cloves, minced
- 1 tbsp. tomato paste
- 2 tsp. cumin
- 1 tsp. paprika
- 1/2 tsp. oregano
- 1/2 tsp. coriander
- 1/2 tsp kosher salt
- 1/4 tsp pepper
- 1 cup canned pinto beans, rinsed and drained
- 2 cups shredded lettuce
- 2 small tomatoes, chopped
- 1/2 cup reduced fat shredded cheese
- 1/4 cup cilantro
- 1/2 cup salsa, divided

Step 1
Preheat the oven to 400 degrees. Place the tortillas directly on the oven rack and cook for 8-10 minutes until crisp to create the tostada shells.

Heat the olive oil over medium high heat. Add the onions and peppers and cook for 4-5 minutes. Add the turkey and garlic. Cook for 7-10 minutes until the turkey is fully cooked.

Stir in the tomato paste, cumin, paprika, oregano, and coriander. Cook for one minute. Season with salt and pepper.

Heat the pinto beans in a pan or the microwave. Then use the back of a fork to slightly mash the pinto beans. Mash in half of the salsa.

Step 5
Build the tostadas by spreading a thin layer of beans on the corn tortillas. Then add the turkey. Top with lettuce, tomatoes, cheese, cilantro, and extra salsa, if so desired.
