These tasty Turkey Tostadas with poblano peppers take less than 25 minutes to make! Crispy baked tortillas topped with pinto beans, turkey, lettuce, tomato, cheese, and salsa.

Ingredients

  • 8 corn tortillas
  • 2 tsp. olive oil
  • 1 poblano pepper, seeded and chopped
  • 1/2 red onion, sliced thin
  • 1 lb. 99% lean ground turkey
  • 2 garlic cloves, minced
  • 1 tbsp. tomato paste
  • 2 tsp. cumin
  • 1 tsp. paprika
  • 1/2 tsp. oregano
  • 1/2 tsp. coriander
  • 1/2 tsp kosher salt
  • 1/4 tsp pepper
  • 1 cup canned pinto beans, rinsed and drained
  • 2 cups shredded lettuce
  • 2 small tomatoes, chopped
  • 1/2 cup reduced fat shredded cheese
  • 1/4 cup cilantro
  • 1/2 cup salsa, divided

Step 1 Preheat the oven to 400 degrees. Place the tortillas directly on the oven rack and cook for 8-10 minutes until crisp to create the tostada shells.

Step 2 Heat the olive oil over medium high heat. Add the onions and peppers and cook for 4-5 minutes. Add the turkey and garlic. Cook for 7-10 minutes until the turkey is fully cooked.

Step 3 Stir in the tomato paste, cumin, paprika, oregano, and coriander. Cook for one minute. Season with salt and pepper.

Step 4 Heat the pinto beans in a pan or the microwave. Then use the back of a fork to slightly mash the pinto beans. Mash in half of the salsa.

Step 5 Build the tostadas by spreading a thin layer of beans on the corn tortillas. Then add the turkey. Top with lettuce, tomatoes, cheese, cilantro, and extra salsa, if so desired.
