Step 1
Heat a large skillet over medium-high heat. Add the ground beef and onion. Cook for 6-8 minutes, breaking up the meat as it cooks. Add the tomato paste and taco seasoning. Stir well. Taste and season as needed. If the meat seems thick at all, add 1-2 tbsp of water.
Step 2
Slice the avocados in half and remove the pit. If desired, scoop out a little of the avocado to have more room for the filling. You can always pile it on top after.
Step 3
Stuff the avocados with the ground beef mixture. Then top with all your favorite toppings - shredded lettuce, tomatoes or pico de gallo, shredded cheese, salsa, sour cream, cilantro, crushed-up tortilla chips, etc.
