  • 1 sweet onion, sliced thin
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tbsp taco seasoning
  • 14 oz canned black beans, rinsed and drained
  • Salt and pepper
  • 8 corn tortillas

Step 1 Preheat the oven to 425 degrees. Cover a large baking sheet with parchment paper. Toss the cauliflower, sweet potato, and sweet onion with lime juice, olive oil, and taco seasoning.
