What you need:

  • 1.5 lbs 93% lean ground turkey (or ground beef)
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp kosher salt
  • 1/2 tsp oregano
  • 1 potato, peeled and diced small
  • 2 carrots, diced
  • 3 jalapenos (kept whole)
  • 14 oz can tomato sauce
  • 4 tbsp. chipotle peppers in adobo (adjust to taste)
  • 1 bay leaf
  • Salt and Pepper

Step 1 Brown the turkey and onion in a skillet until no longer pink. In the last 1 minute of cooking, add the garlic,s alt, and and spices.

Step 2 Meanwhile, blend together the tomato sauce and chipotles, adding the peppers one at a time until it reaches your desired spice level. If you want to skip this step and prefer a milder sauce, simply use the liquid from the can and stir it into the sauce to taste.

Step 3 Add the turkey, potatoes, whole jalapeno pepper, carrots, and chipotle tomato sauce to the slow cooker. Cook on high for 4 hours or low for 8 hours.

Step 4 Serve with fresh cilantro. Picadillo is normally eaten with rice and corn tortillas.
