What you need:

  • 1 lb. dry black beans (rinsed)
  • 6 cups vegetable broth (or water)
  • 1 onion, quartered
  • 4 garlic cloves, peeled
  • 1 bay leaf
  • 2 tsp. kosher salt

Step 1 Add everything, except the salt, to the slow cooker. Cover the beans with water or stock until there is one inch of water over the beans. It should be about 6 cups.

Step 2 Cook on low for 6-8 hours until the beans are tender. During the last 30 minutes of cooking, add the salt.
