  • 2 cups old fashioned oats
  • 2 cups unsweetened almond milk
  • 1/4 cup pure maple syrup
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp salt
  • 1.5 cups strawberries, sliced (divided)
  • 2 bananas, sliced (divided)
  • 1/4 cup semi-sweet chocolate chips

Step 1 Preheat the oven to 375 degrees. Spray an 8 X 8 baking pan with cooking spray or parchment paper. In a large bowl mix together the oatmeal, almond milk, eggs, maple syrup, baking powder, cinnamon, and salt.

Step 2 Fold in half of the strawberries and bananas. Pour this oatmeal mixture into the baking dish. Spread the remaining strawberries, and banana slices on top. Sprinkle with chocolate chips.

Step 3 Bake for 35-45 minutes until the top is browned and oatmeal is cooked through. Allow to cool for at last 5 minutes before serving.
