Ingredients
3 cups cooked quinoa
2 tsp coconut oil, melted, divided
2 tsp sesame oil
6 scallions, chopped
2 cups green cabbage, chopped
1 cup broccoli, chopped
1 cup snow peas, chopped
1 red pepper, chopped
1/2 cup carrot, diced
4 cloves garlic, minced
2 tsp fresh ginger, minced
4 tbsp soy sauce (or coconut aminos for GF)
1 tbsp maple syrup
1 tbsp almond butter
1 tsp Sriracha (optional)

Step 1
Stir together the soy sauce, maple syrup, and almond butter. Set aside.

Add the coconut oil and sesame oil to the hot pan. Add the scallions, cabbage, broccoli, snow peas, red pepper, and carrots. Cook for 6-8 minutes until they just begin to soften. Add 1-2 tbsp. of water if needed.
