This 15 minute stir fry is bursting with flavor, protein packed quinoa, and tons of fresh vegetables. A delicious main course or side dish and great use for leftover quinoa.

  • 3 cups cooked quinoa
  • 2 tsp coconut oil, melted, divided
  • 2 tsp sesame oil
  • 6 scallions, chopped
  • 2 cups green cabbage, chopped
  • 1 cup broccoli, chopped
  • 1 cup snow peas, chopped
  • 1 red pepper, chopped
  • 1/2 cup carrot, diced
  • 4 cloves garlic, minced
  • 2 tsp fresh ginger, minced
  • 4 tbsp soy sauce (or coconut aminos for GF)
  • 1 tbsp maple syrup
  • 1 tbsp almond butter
  • 1 tsp Sriracha (optional)

Step 1Stir together the soy sauce, maple syrup, and almond butter. Set aside.

Step 2Add the coconut oil and sesame oil to the hot pan. Add the scallions, cabbage, broccoli, snow peas, red pepper, and carrots. Cook for 6-8 minutes until they just begin to soften. Add 1-2 tbsp. of water if needed.

Step 3Add the garlic and ginger. Cook for 1-2minutes until fragrant.

Step 4Add the cooked quinoa and cook for about 5 minutes. Stir as needed, letting the quinoa get slightly crispy.
