Ingredients

  • 1.5 lbs large shrimp, peeled and devined
  • 2 tbsp canned chipotle peppers in adobo, minced (or pureed, or Mexican huichol salsa)
  • 2 tbsp mayonnaise
  • 1 lime, juice
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Let's Watch Spicy Grilled Shrimp

Step 1 In a bowl, combine the chipotle peppers, mayonnaise, lime juice, garlic powder, salt, and pepper. If you like sweet and spicy, add 1 tbsp of honey to the marinade as well.

Step 2 Thread the shrimp onto skewers (optional, but much easier to grill). Brush on both sides with the marinade. Let marinate for 15-30 minutes.

Step 3 When ready to grill, heat the grill over medium high heat. Grill for 2-3 minutes on each side until the shrimp is opaque and cooked through. Be careful not to overcook, usually my shrimp only needs 2 minutes on the first side and one minute on the second. We love to serve this with creamy coleslaw, lime cream (recipe below), and/or mango salsa.
