Spicy Cabbage and Corn Slaw

What you need:

  • 2 cups fresh (or frozen) corn, cooked
  • 14 oz. shredded cabbage coleslaw mix
  • 2 jalapeno peppers, seeded and minced
  • 1 tbsp. chili powder
  • 1 tsp. oregano
  • 1 tsp. cumin
  • 1/2 cup fresh cilantro, chopped
  • 2 limes, juice
  • 1/4 cup low fat mayonnaise
  • 1 tbsp. honey
  • Salt and pepper

Step 1 Whisk together the mayo, lime juice, honey, and spices until smooth.

Step 2 Toss together the corn, coleslaw, and jalapeno peppers. In another bowl stir together the remaining ingredients.
