What you need:

  • 1 tsp olive oil
  • 1 onion, diced
  • 1 cup carrots, diced (optional)
  • 1 cup celery, diced (optional)
  • 1 lb 99% lean ground turkey
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2.5 tbsp chili powder (more to taste)
  • 2 tbsp ground cumin
  • 1 tbsp garlic powder
  • 2 tsp oregano
  • 2 tsp salt
  • 1 tsp ground black pepper
  • 1/4 tsp cayenne pepper (optional, to taste)
  • 2 cups low sodium beef broth
  • 14 oz canned diced fire roasted tomatoes (with juice)
  • 14 oz canned kidney beans, drained and rinsed
  • 14 oz canned pinto beans, drained and rinsed
  • 1 cup canned tomato sauce (no sugar added)

Step 1 Heat the olive oil over medium high heat in a heavy pan. Add the onions, carrots, and celery. Cook for 5-7 minutes, stirring as needed, until onions are tender.

Step 2 Add the ground turkey, breaking it up with a wooden spoon. Cook for 5-7 minutes until cooked through.

Step 3 Add the minced garlic, tomato paste, and all the spices. Cook for 2-3 minutes until very fragrant.

Step 4 Add this mixture to the slow cooker. Add the tomatoes, kidney beans, pinto beans, tomato sauce, and beef broth. Cook on low for at least 4 hours.
