What you need:

  • 2 lbs boneless lean pork shoulder, chopped
  • 1 small onion, chopped
  • 6 cloves garlic, minced
  • 2 oranges, juice (1/3 cup)
  • 1 lime, juice (3-4 tbsp)
  • 1.5 tsp oregano
  • 1 tsp cumin
  • 1.5 tsp kosher salt
  • 1/2 tsp pepper
  • 1 bay leaf
  • 2 tbsp fresh mint, minced
  • 2 tbsp fresh cilantro, minced (or fresh oregano to taste)

Step 1 Cut the pork into pieces, about 1.5-2 inches each. Add the pork to the slow cooker with the garlic, onion, orange juice, lime juice, oregano, cumin, salt, pepper, and bay leaf.

Step 2 Cook on low for 8 hours. Keep the chunks whole or shred, this is personal preference.

Step 3 For those delicious crispy bits, spread the pork out on the baking sheet and place under the broiler for 3-5 minutes.

Step 4 While the pork is broiling, combine about ½ cup of the leftover cooking liquid with the cilantro and mint. Then drizzle the pork with all the yummy cooking sauce.
