Cut the pork into pieces, about 1.5-2 inches each. Add the pork to the slow cooker with the garlic, onion, orange juice, lime juice, oregano, cumin, salt, pepper, and bay leaf.

While the pork is broiling, combine about ½ cup of the leftover cooking liquid with the cilantro and mint. Then drizzle the pork with all the yummy cooking sauce.
