Ingredients

  • 1 tbsp sesame oil
  • 2 pounds lean ground chicken
  • 1/3 cup green onions, chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 1/2 cup hoisin sauce
  • 2 tbsp low sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp Asian garlic chili paste (optional)
  • 8 ounces mushrooms, minced (baby bella preferred)
  • 1 red bell pepper, diced
  • 1 cup grated carrots
  • 8 oz water chestnuts, drained and chopped
  • 2 heads butter lettuce (or iceberg lettuce)

Step 1 Heat the sesame oil over medium-high heat. Add the lean ground chicken and cook for 5-7 minutes until cooked through. Break it up as it cooks with a wooden spoon and cook until no longer pink.

Step 2 Add the green onions, garlic, and ginger to the skillet. Cook for 1 minute until fragrant.

Step 3 In a small bowl, mix together the hoisin sauce, soy sauce, rice vinegar, sesame oil, and chili paste. Taste and adjust the spice level if desired.

Step 4 Add the chicken to the slow cooker. Stir in the mushrooms, red bell pepper, and carrots. Pour sauce on top and stir everything together. Cook on low for 3-4 hours.

Step 5 When ready to eat, mix in the water chestnuts. Serve in lettuce wraps. Top with cilantro, green onions, and crushed peanuts if desired. If needed, add a cornstarch slurry to the slow cooker to thicken the sauce.
