This delicious classic French dish with slow cooker chicken is made with 40 whole cloves of garlic! However, even with that much garlic, the flavor is balanced and delicious.

Ingredients

  • 1 tbsp olive oil
  • 1 leek, chopped
  • 1/2 onion, chopped
  • 2 lbs boneless skinless chicken breast
  • 1 tsp kosher salt
  • 1 tsp dried thyme
  • 1/2 tsp fresh ground pepper
  • 1 cup low sodium chicken broth (or white wine)
  • 40 cloves garlic, peeled ( I used 3 heads of garlic)
  • 1 bay leaf
  • 2 tbsp butter
  • 2 tsp cornstarch
  • 1 tbsp water
  • 1/4 cup parsley (for serving)

Step 1 Heat the olive oil over medium-high heat. Add the leeks and onions. Saute for about 5-7 minutes until they begin to soften.

Step 2 Cover the bottom of the slow cooker with about half of the leeks and onions. Add half the garlic cloves. Add the chicken and sprinkle with salt, pepper, thyme, and paprika. Top with remaining leeks, onions, and garlic. Pour into the chicken broth and add bay leaf. Stir to combine.

Step 3 Cover and cook on high for 4 hours or on low for 7-8 hours. Remove the chicken from the slow cooker. Add the butter and stir until melted. Mix the cornstarch with water. Add to the slow cooker and stir. Let sit for 5-10 minutes until sauce thickens.

Step 4 Serve the chicken with leeks, onions, and garlic. Season with salt snd pepper if needed.
