What you need:

  • 1 lb dry pinto beans, rinsed
  • 1 onion, diced
  • 4 cloves garlic, diced
  • 2 poblano peppers, seeded and diced
  • 1/2 tbsp cumin
  • 1 tsp salt
  • 2 bay leaves
  • 6 cups water (or enough to cover beans, the broth also works great)

Step 1 Start by rinsing your pinto beans and removing any sand or rocks. Add the beans, onions, garlic, poblano, cumin, salt, and bay leaves to the crock pot.

Step 2 Cover with chicken broth, water, or vegetable broth until there is a 1-2 inches of broth above the beans.

Step 3 Cook for 8-10 hours until beans are soft.
