This Sheet Pan Herb Chicken and Sweet Potatoes recipe combines seasoned chicken, sweet potatoes, and veggies on one sheet pan for an easy and delicious meal!

Preheat the oven to 425 degrees. In a small bowl, combine the paprika, chili powder, garlic powder, thyme, rosemary, salt, and pepper. For a sweet and spicy spice blend, add 1-2 tbsp of brown sugar to the spice rub.

Cover a large baking sheet with parchment paper or foil. Add the sweet potatoes and onions to the sheet pan. Spray with cooking spray (or olive oil). Sprinkle half the spice rub on the potatoes. Toss well to coat and spread in a single layer on the sheet pan. Place in the oven for 15 minutes.

While the sweet potatoes cook, spray the chicken with cooking spray (or olive oil) and coat with the remaining spice rub. Coat the broccoli florets with cooking spray (or oil) and season with and salt, pepper, and a sprinkle of garlic powder.

Remove the sheet pan from the oven and check the sweet potatoes. They should be slightly tender, if not, cook them for 5-8 more minutes until slightly tender. Push the sweet potatoes to one side, not overly crowding the pan. Add the chicken and broccoli to the pan. If you are not using a large sheet pan, I recommend doing this on two sheet pans so everything can be cooked in a single layer. This helps it roast instead of steam.
