Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 4 garlic cloves, minced
  • 1 bay leaf
  • 1 tbsp Italian seasoning
  • 1/4 tsp red pepper flakes (options, more to taste)
  • 1 lb dry lentils
  • 6 cups chicken broth (or vegetable)
  • 6 cups fresh spinach (or frozen)

Step 1 Heat a large pot or Dutch oven over medium high heat. Remove the sausage from the casing if needed and add to the Dutch oven. Break it up with a wooden spoon and cook 7-9 minutes until browned and cooked through.
