Ingredients

  • 1 tbsp sesame oil
  • 2 tsp coconut oil
  • 1.5 lbs boneless skinless chicken breast, chopped
  • 1 red onion, chopped
  • 1 red bell pepper, chopped
  • 2 cups broccoli florets
  • 2 cups cauliflower florets (or more broccoli)
  • 1 cup pineapple (fresh, frozen, or canned, drained)
  • 1/3 cup low sodium soy sauce
  • 1/4 cup pineapple juice
  • 2 tbsp rice wine vinegar
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 2 tsp fresh ginger, minced
  • 1 tbsp cornstarch (or arrowroot powder)

Step 1 Whisk together all of the ingredients for the sauce. Set aside.

Step 2 Add half of the sesame oil and half of the coconut oil to a skillet over medium-high heat. Add the chicken and cook until no longer pink and just cooked through, about 5-7 minutes. Remove from pan and set aside.

Step 3 Add the remaining sesame and coconut oil to the pan. Add the red onion, bell pepper, broccoli, and cauliflower. Cook for 5-7 minutes until vegetables are tender-crisp.

Step 4 Add the chicken, pineapple, and sauce. Bring to a simmer and cook for 2-4 minutes until the sauce thickens.
