What you need:

  • 1 red onion, sliced thin
  • 4 limes, juiced (more if needed)
  • 1 tbsp white vinegar
  • 1 tsp kosher salt (or sea salt)
  • 1 tsp black peppercorns

Step 1 Slice the onions very thin using a sharp knife or mandolin. Add the onions to a glass jar or bowl.

Step 2 Cover with lime juice, white vinegar, salt, and peppercorns. Add more lime juice if the onions aren't mostly submerged.

Step 3 Shake or stir, pressing the onions down into the lime juice. Let sit for at least 30 minutes, ideally 60 minutes.
