What you need:

  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breast, cut into cubes
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 8 oz short pasta (like penne or rigatoni, whole wheat if desired)
  • 1.5 cups marinara sauce
  • 1.5 cups low sodium chicken broth (more if needed)
  • 3 tbsp mozzarella cheese
  • 3 tbsp parmesan cheese
  • 1/4 cup fresh basil

Step 1 Heat the olive oil over medium high heat in a Dutch oven or large pot. Toss the chicken with Italian seasoning, garlic powder, salt, and pepper. Add chicken to the hot pan and cook, stirring as needed, until browned. This will take about 5 minutes. Remove chicken and set aside.

Step 2 Add the onion and red bell pepper to the pan. Cook for 4-5 minutes until beginning to soften. Add the garlic and cook for 1 minute until fragrant. Add the marinara sauce and chicken broth. Bring to a simmer.

Step 3 Add the chicken and pasta. Cover and cook for 12-15 minutes or until pasta is cooked to your liking.

Step 4 Open the pot and add the mozzarella and parmesan cheese on top. Cover for 1 minute to let the cheese melt. Season with salt and pepper as needed, Serve with fresh basil.
