- 2 cups sesame seeds
- 2 tbsp olive oil (more as needed, or other neutral oil)
- 1/4 tsp kosher salt (more to taste)
Heat a skillet over medium heat. Add the sesame seeds and gently toast, stirring as needed, making sure not to burn. It should take about 5 minutes but watch carefully since they burn quickly. Let cool.
Add the sesame seeds to a food processor. Process for 1-2 minutes until crumbly with a sandy texture.
Add the salt and then slowly drizzle in the olive oil and continue to process, scraping down the sides as needed.
Continue to process until the tahini is smooth and creamy, it may take about 5 minutes.
