1 lemon, zest only
1/4 cup fresh parsley minced
2 cloves garlic, minced
1 tsp oregano
1 tsp salt
1/2 tsp cumin
1/2 tsp pepper
1/4 tsp coriander
1/8 tsp allspice

Preheat the oven to 400 degrees. Combine all of the ingredients in a bowl and use your hands (or a spoon) to mix until just combined
