What you need:

  • 1 lb eggplant
  • 1 tbsp olive oil
  • 2 tsp Worcestershire sauce (or soy sauce or coconut aminos)
  • 2 tsp balsamic vinegar
  • 2 garlic cloves, minced
  • 2 tbsp parsley
  • Salt and pepper

Step 1 Cut the eggplant in rounds, about 3/4 of an inch thick. You can also cut the eggplant into long planks.

Step 2 Mix together the olive oil, Worcestershire sauce, balsamic vinegar, garlic, and parsley. Toss the eggplant with this mixture and let is sit for 5 minutes. Eggplant absorbs flavors rapidly so there is no need to marinate it for a long time.
