Turn the bag of spring mix in your fridge into the best salad! Crunchy cucumbers, tomatoes, carrots, spring mix, and an easy homemade balsamic vinaigrette.

  • 10 oz spring mix
  • 2 Persian cucumbers, sliced
  • 1.5 cups cherry tomatoes, halved
  • 1/2 cup shredded carrots
  • 1/4 red onion, thinly sliced
  • 1/3 cup plain nonfat Greek yogurt
  • 3 tbsp balsamic vinegar
  • 1.5 tbsp olive oil
  • 2 tsp Dijon mustard
  • 2 tsp honey (more to taste)
  • Salt and pepper

Step 1 Make the dressing by whisking together the yogurt, balsamic vinegar, olive oil, mustard, and honey.

Step 2 Toss together the spring mix, cucumbers, tomatoes, carrots, and red onion. Drizzle with dressing.

Step 3 Optional croutons: Preheat the oven (or toaster oven) to 400 degrees. Chop 2 pieces of sourdough bread (or other) into pieces and spray with cooking spray (or toss with olive oil.) Sprinkle with salt, pepper, and any spices you like. Bake for 8-10 minutes until crispy. Remove and set aside.
