Chicken Burrito Bowls (One Pot!) Recipe

This one-pot burrito bowl couldn't be easier to make! Perfect for quick and easy dinner or for meal prep. All the classic burrito bowl ingredients cooked in less than 30 minutes.

List of Ingredients:

  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breast, sliced
  • 2 tbsp taco seasoning
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 1/2 onion, sliced
  • 14 oz. canned diced fire roasted tomatoes
  • 14 oz. canned black beans
  • 1 cup white rice (or brown quick-cooking rice)
  • 1.5 cups low sodium chicken broth

1 If you are making homemade taco seasoning (see notes), mix together the chili powder, cumin, garlic powder, oregano, paprika, black pepper, and salt to create the spice mixture.

2 Heat the olive oil over medium high heat. Add the chicken and half the spice mixture. Cook until lightly browned on the outside, 3-5 minutes. Remove and set aside.

3 Add the peppers and onions to the pan. Cook for 4-5 minutes until beginning to soften.

4 Add the diced tomatoes, black beans, rice, chicken broth, and remaining spice mixture. Stir together and bring to a boil.

5 Add the chicken to the pan and turn the heat down to a simmer. Cover and cook for 20-25 minutes or until the rice is cooked through. The cooking time may vary based on the rice you choose. Use the directions for the rice for a rough estimate of how much time it will take.

6 Open and season with salt and pepper as needed. Top with cheese, cilantro, salsa, avocado, sour cream, fresh lime juice, and anything else that you would throw onto a taco
