Chicken Alambre Tacos

What you need:

  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breast, sliced
  • 1 tbsp paprika (divided)
  • 1 tbsp garlic powder (divided)
  • Salt and pepper
  • 4 slices center cut bacon, chopped
  • 1 red onion, sliced thin
  • 1 red bell pepper, sliced thin
  • 1 green bell pepper, sliced thin
  • 2 Roma tomatoes, chopped
  • 2 garlic cloves, minced
  • 1 tbsp low sodium soy sauce (or Maggi sauce)
  • 1/2 cup shredded Mexican cheese
  • 8 corn tortillas
  • 1/4 cup cilantro
  • 1 lime (wedges)

Step 1 Heat the olive oil in a heavy skillet over medium-high heat. Toss the chicken with half of the paprika, garlic powder, salt, and pepper. Add to the skillet in a single layer. Cook for 3-4 minutes per side or until lightly seared and just cooked through. Remove and set aside.

Step 2 Add an extra drizzle of olive oil to the pan if needed. Add the bacon, onions, and bell peppers. Cook for 4-6 minutes until beginning to soften. Add the tomatoes, garlic, and soy sauce/Maggi sauce. Cook for another 3-5 minutes until the tomatoes soften. Taste and season if needed.

Step 3 Add the chicken back to the pan and stir to combine. Sprinkle the cheese over top. Cover and cook 1-2 minutes until the cheese melts. If you don’t have a cover, just let the cheese melt.

Step 4 Serve in warm corn tortillas with fresh cilantro and lime.
