Step 1
Heat the olive oil in a heavy skillet over medium-high heat. Toss the chicken with half of the paprika, garlic powder, salt, and pepper. Add to the skillet in a single layer. Cook for 3-4 minutes per side or until lightly seared and just cooked through. Remove and set aside.
Step 2
Add an extra drizzle of olive oil to the pan if needed. Add the bacon, onions, and bell peppers. Cook for 4-6 minutes until beginning to soften. Add the tomatoes, garlic, and soy sauce/Maggi sauce. Cook for another 3-5 minutes until the tomatoes soften. Taste and season if needed.
Step 3
Add the chicken back to the pan and stir to combine. Sprinkle the cheese over top. Cover and cook 1-2 minutes until the cheese melts. If you don’t have a cover, just let the cheese melt.
