Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 cups broccoli florets, chopped
  • 1 tbsp water
  • 1/2 cup reduced fat shredded cheddar cheese
  • 1/4 cup low fat cream cheese
  • 1 tbsp Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper

Step 1 Preheat the oven to 425 degrees. Use a sharp knife to carefully cut a slit, like a pocket, into each chicken breast. Do not cut through the chicken breast completely. You are creating a pocket for the stuffing.

Step 2 Mix together the Italian seasoning, garlic powder, onion powder, salt, and pepper. Brush the chicken with olive oil and rub the spice mixture over the breasts on both sides.

Step 3 Add the chopped broccoli to a small bowl with the water. Cook in the microwave for 1-2 minutes to soften the broccoli. Then in a medium bowl, mix together the broccoli, shredded cheddar cheese, cream cheese, Dijon mustard, garlic, salt, and pepper.

Step 4 Stuff this mixture into each chicken breast.

Step 5 Heat the olive oil over medium-high heat in a heavy skillet. Sear the chicken breasts for 2-3 minutes on each side until browned. Cover the skillet with foil and bake for 15-17 minutes or until chicken is cooked through to 165 degrees. Let rest for 5 minutes before serving.
