What you need:

  • 1 tbsp olive oil
  • 1/2 white onion, diced
  • 2 serrano peppers, seeded and diced (this is spicy, use less if desired)
  • 3 garlic cloves, minced
  • 6 Roma tomatoes, diced
  • 1.5 lbs shrimp, peeled and deveined
  • 1/2 cup cilantro, chopped
  • Salt and pepper

Step 1 Heat the olive oil in a large skillet over medium-high heat. Add the onion and serrano peppers. Cook for 6-8 minutes, until beginning to soften and become translucent. Add the garlic and cook for about 1 minute until nice and fragrant.

Step 2 Add the tomatoes. Stir together and cook for 8-12 minutes, until the tomatoes break down into a sauce.

Step 3 Add the shrimp and season with salt and pepper. Cook for 1-2 minutes per side until pink and cooked through.

Step 4 Stir in cilantro. This is normally served with white rice.
