2 serrano peppers, seeded and diced (this is spicy, use less if desired)
3 garlic cloves, minced
6 Roma tomatoes, diced
1.5 lbs shrimp, peeled and deveined
1/2 cup cilantro, chopped
Salt and pepper

Step 1
Heat the olive oil in a large skillet over medium-high heat. Add the onion and serrano peppers. Cook for 6-8 minutes, until beginning to soften and become translucent. Add the garlic and cook for about 1 minute until nice and fragrant.

Add the tomatoes. Stir together and cook for 8-12 minutes, until the tomatoes break down into a sauce.
