What you need:

  • 2 lbs boneless skinless chicken thighs
  • 4 garlic cloves, smashed
  • 1/4 cup low sodium soy sauce
  • 2 tbsp balsamic vinegar (or apple cider vinegar)
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tsp sweet paprika
  • 1 tsp dried rosemary
  • 1/2 tsp black pepper

Step 1 Whisk together the soy sauce, balsamic vinegar, olive oil, honey, musatrd, paprika, rosemary, and black pepper.

Step 2 Add the chicken thighs, garlic, and marinade to a ziploc bag or non-reactive bowl. Marinate for at least one hour, ideally overnight.

Step 3 When ready to grill, remove from marinade, shaking off excess marinade. Grill over medium high heat for 4-5 minutes per side or until it reachesa 165 degrees. Let rest for 5 minutes before serving.
