List of Ingredients:

  • 2 bananas, very ripe
  • 1/4 cup peanut butter
  • 1/4 cup chopped dates
  • 1 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. ground ginger
  • 2 cups oats

1 Preheat the oven to 350 degrees. Mash the bananas using a fork until completely mashed and almost liquidy. If you have any frozen ripe bananas, they work great for this recipe. Just microwave them for 1-2 minutes to thaw and then remove from the peels and mash.

2 Add the peanut butter, dates, vanilla, cinnamon, salt, and ginger. Stir until smooth.

3 Add the oats and stir until well combined.

4 Press into an 8X8 glass pan and bake for 25-30 minutes until golden brown. Cool and cut into squares.

5 Cool and cut into squares. Store in an airtight container.
