Baked Oatmeal Muffins Recipe

In less than 30 minutes, make delicious baked oatmeal muffins sweetened with bananas! These healthy muffins are great for breakfast, snacks, and meal prep.

List of Ingredients:

  • 2 cups old fashioned oats
  • 2 tbsp flaxseed meal
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 2/3 cup unsweetened almond milk (or skim)
  • 2 ripe bananas, mashed
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 2 eggs

1 Preheat the oven to 375 degrees. Spray standard muffin tin with cooking spray or line with muffin liners. In a large bowl, mix together the oats, flaxseed meal, cinnamon, baking powder, and salt.

2 In another bowl, mix together the milk, bananas, egg, maple syrup, and vanilla extract.

3 Add the wet ingredients to the dry ingredients and stir until combined.

4 Fill each muffin around 3/4 of the way full and bake for about 18-20 minutes until a toothpick comes out clean. Let cool for at least 10-15 minutes before serving and then place on a wire rack.
