What you need:

  • 4 Flatout Light wraps (or large tortillas)
  • 2 tsp. vegetable oil
  • 1 lb. tilapia (or other white fish)
  • 1 lime
  • 2 tbsp. orange juice
  • 1 tbsp. ancho chili powder
  • 1/2 tsp. cumin
  • 1 cup canned black beans, drained and rinsed
  • 1 cup cole slaw mix
  • 1/2 cup avocado
  • 1/2 cup tomatoes, chopped
  • 1/2 cup corn
  • 1/4 cup cilantro
  • Salt and pepper

Step 1 Mix together the lime juice, orange juice, chili powder, and cumin. Pour over fish and let rest for 10-15 minutes. Meanwhile prepare all the other burrito fixings.

Step 2 Heat the oil over medium high heat. Add the fish and cook for 3-4 minutes per side or until flaky and cooked through. Season with salt and pepper.

Step 3 Lay out the Flatout wrap and layer in the fish, cabbage, black beans, corn, tomatoes, cilantro, and avocado. Add your favorite salsa if desired. Wrrap and serve.
