Heat the oil over medium heat in a nonstick pan. Add the onions, green peppers, and red peppers. Cook for 5-7 minutes until soft. Add the ham and garlic and cook for 2 minutes.

Place under the broiler, about 6 inches away, and cook until eggs are cooked through and puffed up about 3 minutes. Let cool and cut into slices to serve.
