Heat the oil over medium heat in a nonstick pan. Add the onions, green peppers, and red peppers. Cook for 5-7 minutes until soft. Add the ham and garlic and cook for 2 minutes.

Pour the egg mixture over the top and sprinkle cheese over top. Cook until edges are set and middle is just beginning to firm up, about 4-5 minutes.
