List of Ingredients:

  • 1 lb vegan ground beef (like Impossible Beef, Beyond Burger, etc)
  • 1/2 cup tomato sauce
  • 2 tbsp taco seasoning
  • [Cilantro Lime Rice]
  • 2 cups cooked white rice
  • 2 tbsp lime juice
  • 1/4cup fresh cilantro, chopped
  • Salt and pepper
  • [Avocado Corn Salsa]
  • 1 cup corn
  • 1 avocado, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeno, chopped
  • 2 tbsp red onion, diced
  • 2 tbsp cilantro, chopped
  • 2 tbsp lime juice
  • Salt and pepper to taste
  • [Toppings]
  • 2 cups canned black beans, rinsed and drained
  • 1 cup pico de gallo (or salsa of choice)
  • 1 cup shredded lettuce (or purple cabbage)

1 Heat a large skillet over medium-high heat. Add the vegan ground beef and cook for 6-8 minutes or according to package directions. Add the tomato sauce and taco seasoning. Turn the heat down to low and cook/simmer for 5 minutes. Taste and season as needed.

2 To make the cilantro lime rice, combine the cooked rice, lime juice, cilantro, salt, and pepper.

3 To make the avocado corn salsa, combine the corn, avocado, red bell pepper, jalapeno, red onion, cilantro, lime juice, salt, and pepper. Taste and season as needed.

4 To make the bowls, layer in the rice. Then add the salsa, pico de gallo, shredded lettuce, and any other topping you like. We like to add a dollop of Greek yogurt (or vegan sour cream), fresh lime wedges, and sliced jalapenos.
