What you need:
- 1 tbsp olive oil
- 1 medium onion, diced
- 1/2 lb 95% lean ground beef
- 1/4 lb lean ground turkey sausage (or 1 link, removed from casing)
- 2 bell peppers, diced (any color)
- 4 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp kosher salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon red pepper flakes
- 1/2 cup uncooked quinoa
- 1 cup water
- 1 cup marinara sauce
- 1 tbsp balsamic vinegar
- 1/2 cup parmesan cheese
- 2 tbsp fresh parsley (for garnish, or basil)
Heat a large (10-12”) skillet over medium-high heat. Once the skillet is hot, add the olive oil. Add the onions and cook until soft, about 3-4 minutes. Add the ground beef and sausage and cook until no longer pink, about 6-8 minutes.
Add the peppers, garlic, oregano, salt, pepper, and red pepper flakes to the skillet. Stir to combine. Add the quinoa and stir once more. Add water to the skillet. Bring to a boil and then reduce heat to low. Simmer covered until quinoa is cooked through, about 20 minutes.
When quinoa is done, remove the lid and stir in marinara sauce and balsamic vinegar. Top with the parmesan. Turn heat to low and cover skillet. Allow it to sit for 5 minutes or until cheese is melted. Garnish with parsley and serve warm.
